Jenny McCabe’s Cookie Chow Delivers Big Flavor in Every Bite

Known for thick, gooey cookies and creative spins on classic treats, this local brand keeps growing across the state

There’s a moment, usually after the first bite, when a Cookie Chow cookie stops being just dessert and turns into something closer to a craving you didn’t know you had. Thick, soft, and just indulgent enough, these cookies have quietly built a devoted following across Rhode Island.

For owner Jenny McCabe, it started with something simple. “I’ve always loved baking and creating desserts that make people genuinely happy,” she says. After moving to Rhode Island, she began baking small batches and hosting pop-ups in Woonsocket, learning as she went. The response was immediate. “The community showed up for me right away,” she recalls, a moment that shaped her focus on consistency, quality, and creating something people remember.

That intention carries through every cookie. “The goal is always comfort first,” McCabe says. Each one leans into that nostalgic, homemade feeling, with a softer, more elevated edge. Texture plays a leading role. Cookies are thick and gooey but never underbaked, with just enough structure to hold together.

The flavors, though, are where things get playful. Inspired by everything from childhood snacks to seasonal cravings, McCabe looks for combinations that feel familiar but a little unexpected. “It has to taste yummy, have the right texture, and feel like something people would come back for,” she says. 

That creativity also shows up in collaborations across the state, from We Be Jammin in Warwick to a Gluten Free Cookie Pie Ice Cream Sundae at Blackie's in Smithfield. The sundae is part of Blackie’s spring and summer menu and, for now, the only place Cookie Chow offers a gluten-free option. Together, the partnerships give fans on opposite ends of Rhode Island a chance to find them in the wild.

Fan favorites often come stuffed, and that’s where things get a little extra in the best way. Think gooey centers that spill just slightly into a soft, warm base, with a bit of crunch tucked in for contrast. It’s rich without feeling heavy, the kind of balance that keeps you going back for another bite. “It can easily become too much,” McCabe says. “I spend a lot of time making sure everything works together.”

Now, with a growing schedule of pop-ups and a new cookie truck, Cookie Chow is expanding its reach while staying rooted in the community that built it.
